Today Kerllen Bittencourt Rego @kerllenrego will show how to make a delicious, healthy and simple blueberry muffins recipe.
Kerllen says that it’s a perfect recipe for the breakfast or snacks. She says that the blueberry muffin recipe is simple and her family loves it .
She says that you can change the blueberries for chocolate chips, jam , strawberries…and that you also can add nuts or even you can make it plain.
All you need to do is combine the dry ingredients in a large bowl. The add the liquid ingredients stir with a fork until blended.
The great tip for a lighter fluffy muffins is to mix dry ingredients as much as you want, mix wet ingredients as much as you want but, when you put the two together only mix until they combine. If you over mix, the muffins will be heavy and flat.
To make the muffins healthier you can swap :
Sugar for stevia
Flour for oats
Ingredients
250g self raising flour or oat to make it healthier
2x5ml tbsp of baking powder
230 ml sem skimmed milk
100 g sugar or stevia
1 egg
60ml oil
150g blueberries

Method
Whisk the flour, sugar, baking powder, in a large bowl.
Add oil, egg, milk whisk to combine.
Add the liquid ingredients with dry ingredients then use a fork to combine. Do not over mix. Fold in the blueberries.
Divide the batter between muffin cups. Bake muffins 15 to 20 minutes .
Transfer to a cooling rack.
It serves delicious 18 muffins .
